Knives Slice, Scissors Shear: Why Your Kitchen Shears Need a Different Edge
You’ve got a kitchen knife, right? A good Wüsthof or a trusty Victorinox. When it's sharp, you put it to a tomato, and it slices clean through. One blade, one cut, simple. Now, pick up a pair of kitchen shears. Do they work the same way? Not even close.
Knives slice. They push a single, wedge-shaped edge through material. The sharper the edge, the less resistance, the cleaner the cut. Scissors, on the other hand, shear. They work like two incredibly sharp knives passing each other, slicing a material between them. It’s a completely different mechanical action, and that means they need a completely different sharpening approach.
Most home cooks, even experienced ones, don't realise this. They figure a blunt edge is a blunt edge. But if you try to sharpen a pair of shears like you would a chef's knife, you'll end up with something worse than blunt – you'll have something that tears, chews, and ultimately, frustrates you every time you try to use them. It's not just about grinding an edge; it's about making two edges work perfectly in concert, with the right angle, the right tension, and the right finish.
Don't Chuck 'Em Out: Why You're Wrong About Blunt Scissors
How many pairs of scissors have you thrown out in your life? Be honest. The kitchen shears that stopped cutting through chicken skin. The fabric shears that snagged on cotton. The old garden snips that just bent stems instead of trimming them. Most people, when their scissors go dull, just toss 'em in the bin and buy a new pair. "They're cheap enough," they tell themselves. Or, "They're ruined."
It's a waste. A proper pair of kitchen shears, good dressmaking shears, or even decent household utility scissors are made from quality steel. They're designed to last decades, not just a few years. What happens when they go blunt isn't a failure of the tool itself; it's a failure of maintenance. Just like a good knife, a good pair of scissors can be brought back to life, often sharper than when you first bought them.
Think about it. You wouldn't throw out a Global chef's knife just because it won't slice paper anymore, would you? You'd sharpen it. The same logic applies to your scissors. They're precision cutting tools, and they deserve the same professional care.
The SharpenIt Difference: Precision for Two Blades, Not One
Sharpening scissors isn't like sharpening a knife for two main reasons: the angle of the grind and the interaction of the blades.
The Bevel & The Ride Line
A knife has a primary bevel that determines its cutting ability. Scissors have two blades, and each has its own bevel. But it's not just about sharpening those individual bevels. It's about how those two blades meet and glide past each other. This is often called the "ride line" or "tension." If the angles are off, or if the blades aren't properly aligned, they won't shear cleanly. They'll push material away, fold it, or just chew it up.
Getting this right requires a specific technique and equipment. It's not something you can do effectively with a pull-through sharpener or even most home sharpening stones. You need to sharpen each blade individually, ensuring the correct angle is restored, and then make sure the "set" or tension between the blades is still perfect. Too tight, and they bind. Too loose, and they won't cut.
Our Water-Cooled, Jig-Controlled Method Applied to Shears
Our workshop method, which delivers razor edges on your knives, works wonders on shears too, precisely because it addresses these unique challenges:
- Zero Heat to the Edge: Just like with knives, overheating a scissor blade will ruin its temper and make it incapable of holding an edge. Many services use high-speed bench grinders that can cook the steel in seconds. Our slow-turning, water-cooled wheel ensures the factory heat treatment of your scissors remains intact. No blueing, no burnt edges, just sharp, resilient steel.
- Perfect Bevel Geometry: We use an angle jig to hold each blade of the scissors at its exact factory angle. This is critical for scissors. Without this precise control, you'd end up with rounded edges or inconsistent angles that prevent the blades from meeting correctly. Our method ensures that each blade's bevel is flat, even, and consistent across its length, just like it was designed to be. This precision is what allows the two blades to shear cleanly without snagging.
- Polished, Not Just Abraded: After the primary sharpening, we finish the edges by hand on a leather honing wheel with polishing compound. This isn't just about making them look pretty. For scissors, a polished edge reduces friction and allows the blades to glide past each other with minimal effort. It's the difference between "sharp enough" and "razor sharp," allowing for smooth, effortless cuts even through tough materials. Most budget sharpeners skip this crucial finishing step.
The result? Scissors that slice through paper, fabric, and even raw chicken like they're new again. Maybe even better.
What Kinds of Scissors Can We Sharpen?
We sharpen most common straight edged household, kitchen, and workshop scissors and shears. If it has two blades that shear past each other, chances are we can get it singing again.
- Kitchen Shears: Essential for disjointing poultry, trimming fat, snipping herbs, or opening stubborn packaging. A dull pair is a dangerous pair.
- Household Utility Scissors: The general-purpose workhorses you use for everything from opening mail to cutting cardboard.
- Fabric/Dressmaking Shears: These are often high-quality tools, and a blunt edge can ruin expensive fabric. Professional sharpening restores their precision.
- Garden Snips: Small, hand-held snips used for flowers or light pruning. (Note: Large, heavy-duty garden shears for hedges or thick branches fall under our 'Heavy' category, but most small snips are 'Standard').
- Fishing Scissors: For cutting line or cleaning fish, a sharp pair is a must-have.
What we *don't* sharpen are serrated blades. If your kitchen shears have a serrated section, we'll only sharpen the smooth, plain edge. We also don't sharpen barber's shears or hair-cutting scissors, as these require highly specialised convex or finely serrated edges and techniques that go beyond general sharpening services. For more details on what we service, check our FAQ page.
Good news for your wallet: most standard scissors and kitchen shears fall under our $15 'Standard' per-knife pricing tier. So, you can get them sharpened for the same price as your paring knife.

The Benefits of Truly Sharp Scissors
Why go to the trouble of sharpening your scissors when you could just buy a new pair? A few good reasons:
- Safety: A blunt blade is a dangerous blade. When scissors are dull, you have to apply more force, increasing the risk of slips and accidents. Sharp scissors cut with minimal effort, giving you better control.
- Precision: Especially for tasks like dressmaking or intricate kitchen prep, precision matters. Sharp scissors give you clean, straight cuts without snagging or tearing.
- Longevity & Sustainability: Why contribute to landfill when your tools still have plenty of life left? Sharpening extends the life of your quality scissors, saving you money in the long run and reducing waste.
- Enjoyment: Let's be honest, there's a certain satisfaction in using a tool that performs exactly as it should. Sharp scissors make kitchen tasks easier, crafting more enjoyable, and gardening less of a chore.
Don't settle for tearing, chewing, or struggling with your scissors anymore. Get them professionally sharpened and rediscover how effortless cutting can be.
